As a student of Agriculture with specialization in Agricultural Biochemistry and
Nutrition at the University of Ibadan (1969 - 1972), I had little exposure to the
emerging field of - Food Science and Technology specialization in Nigeria then.
However, as students in the department of Animal Science, we were exposed
to some aspects of basic food processing, meat and milk processing. These
aroused my interest and some of my colleagues in Food Science and
Technology. By the time we were graduating in June 1972, the University of
Ibadan in her Faculty of Technology had commenced the Food Technology
option. As at that time, the closest to this was the Food Science and Applied
Nutrition Unit (now Department of Human Nutrition) in the College of Medicine
where I did a one year programme in Human Nutrition which further exposed
me to more basic courses in nutrition, food science/technology, nutritional
biochemistry, among others.
